Difficulty

Easy

Baking with mushroom powder is easiest in a moist, well-spiced loaf, and this banana bread uses 10 g of Lion's Mane extract powder across 10 slices, so each slice holds 1 g.

The 10:1 fruiting body extract is treated here as a food ingredient, adding a gentle earthy depth that ripe banana and cinnamon carry well.

Whisking the powder through the dry ingredients first spreads it evenly, so every slice gets the same share.

Recipe notes

The extract amount equals the number of slices. If you cut 12 slices, use 12 g so each slice still holds 1 g.

Mix the powder into the dry ingredients, not the wet ones, so it does not clump and spreads evenly through the loaf.

Use bananas with plenty of brown spots. They add sweetness and moisture, which balances the earthy note of the extract.

Fold the batter gently and stop once no flour shows, since overmixing makes the loaf dense.

For a dairy-free loaf, swap the butter for a light olive oil and the milk for oat milk.

Store slices in an airtight container for up to 3 days, or wrap and freeze for up to 2 months.

This is a food recipe, not a health product. The extract is used here as a food ingredient, and Lion's Mane is traditionally used as a culinary mushroom.

Pairing

Serve a slice with a Lion's Mane latte or a plain flat white.

If you have already had your 1 g serve in the slice, pair it with a regular coffee or tea instead.

FAQs

1. How much Lion's Mane powder goes in banana bread?

Use 1 g of Lion's Mane extract powder per slice, so the total equals the number of slices you plan to cut. This loaf is cut into 10 slices and uses 10 g. Weigh the powder on a digital scale and whisk it through the dry ingredients so each slice ends up with an even share of the label serve.

2. Can you bake with mushroom powder?

Yes. Mushroom extract powders like Lion's Mane can be mixed into batters and doughs as a food ingredient, much like cocoa or spices. Moist, well-flavoured bakes such as banana bread, muffins and brownies suit it best because they carry its mild earthy taste. Mix the powder through the dry ingredients first so it spreads evenly.

3. Does Lion's Mane powder change the taste of banana bread?

Only slightly. At 1 g per slice, Lion's Mane extract adds a gentle earthy, nutty depth that ripe banana, brown sugar and cinnamon cover well. Most people notice a slightly richer loaf rather than a mushroom flavour. Using very ripe bananas and a little vanilla keeps the sweetness forward.

4. How should I store Lion's Mane banana bread?

Once the loaf is completely cool, keep it in an airtight container at room temperature for up to 3 days. For longer storage, wrap individual slices and freeze them for up to 2 months, then thaw at room temperature or toast lightly. Freezing slices separately makes it easy to have one slice, and one 1 g serve, at a time.

5. Can I make this banana bread without eggs or dairy?

Yes. Replace the butter with 80 ml of light olive oil and the milk with oat or soy milk. For the eggs, use 2 flax eggs, made by mixing 2 tbsp ground flaxseed with 6 tbsp water and resting for 5 minutes. The loaf will be slightly denser, and the Lion's Mane amount stays at 1 g per slice.
