Recipe notes
Two balls make one 1 g serve of Lion's Mane, so dividing the mixture evenly by weight matters more than usual.
Mix the extract into the full batch in the processor rather than adding it to individual balls, so it spreads evenly.
Soak hard or dry dates in hot water for 10 minutes and drain well before using.
Swap the peanut butter for almond butter or tahini, and use certified gluten-free oats if needed.
Cacao contains a small amount of caffeine; Lion's Mane itself contains none.
Store in an airtight container in the fridge for up to 7 days, or freeze for up to 3 months.

This is a food recipe, not a health product. Lion's Mane is traditionally used in East Asian cooking and is often researched for its compounds.
Pairing
Serve 2 balls with a plain long black or a cup of green tea for a mid-morning snack.
They also pack well in a lunchbox next to fresh fruit.

FAQs
1. How many Lion's Mane energy balls make one serve?
Two balls make one serve. The batch uses 6 g of Lion's Mane extract powder and makes 12 balls, so each pair holds 1 g, the label serve for our 10:1 extract. Weigh the mixture and divide it into 12 equal portions of about 23 g so every ball carries the same amount of extract.
2. Can I make Lion's Mane energy balls without a food processor?
Yes, though it takes more effort. Use quick oats instead of blitzing rolled oats, mash soaked dates to a paste with a fork, then knead everything together by hand in a bowl. The texture will be a little chunkier. Add the extract to the full batch and mix thoroughly so it spreads evenly before rolling.
3. Do Lion's Mane energy balls contain caffeine?
Lion's Mane contains no caffeine. The only caffeine in these energy balls comes from the 20 g of cacao powder, which adds a small amount spread across the whole batch. If you want to avoid it, swap the cacao for carob powder, which gives a similar colour and a sweeter, caramel-like flavour.
4. How long do Lion's Mane energy balls last?
Kept in an airtight container in the fridge, they last up to 7 days. For longer storage, freeze them in a single layer, then transfer to a container for up to 3 months. Let frozen balls sit at room temperature for about 10 minutes before eating so they soften slightly.
5. Can I use Lion's Mane capsules instead of powder?
The powder is the better fit, because it mixes straight into the date and oat base. Capsules are designed to be swallowed whole, with a serve of two 300 mg capsules, so opening them into a recipe is not how they are intended to be used. For snacks like these, the extract powder is the simpler choice.
