This iced mushroom coffee is a cold espresso drink made with 1 g of Lion's Mane extract powder dissolved in the hot shot first.

The 10:1 fruiting body extract adds a mellow, earthy note that suits espresso, cold milk and plenty of ice.

The caffeine comes only from the coffee, since Lion's Mane itself contains none.

Recipe notes

Weighing is the most reliable way to measure a 1 g serve, since spoon measures vary.

Always dissolve the extract in the hot shot first; powder added straight to cold milk tends to clump.

For a black iced coffee, swap the milk for 150 ml cold water.

For cold foam, froth 50 ml cold milk with the syrup and spoon it over the top.

Decaf espresso works the same way if you want a caffeine free version.

This is a food recipe, not a health product. Lion's Mane is commonly associated with traditional East Asian cooking.

Pairing

Serve with a slice of banana bread or a lemon tart on a warm afternoon.

It also sits well beside a simple breakfast of yoghurt, granola and fresh berries.

FAQs

1. How do you make iced mushroom coffee?

Dissolve 1 g of Lion's Mane extract powder in a hot shot of espresso, then pour it over a glass of ice and cold milk and stir. Dissolving the powder in hot coffee first is the key step, because extract powders clump in cold liquid. The whole drink takes under five minutes to make at home.

2. Can you mix Lion's Mane powder into cold coffee?

It is best not to add it straight to cold coffee or cold brew, as it will not dissolve evenly. Instead, whisk the 1 g serve into 30 ml of hot espresso or hot water first, then add your cold brew, milk and ice. That gives a smooth drink with no gritty bits at the bottom of the glass.

3. Does iced Lion's Mane coffee have caffeine?

Yes, but only from the coffee. Lion's Mane contains no caffeine, so a single shot of espresso is the only source in this recipe. For a caffeine free iced drink, use decaf espresso or decaf instant coffee and follow the same method. The flavour and texture stay almost exactly the same.

4. How much Lion's Mane goes in iced coffee?

This recipe uses 1 g of Lion's Mane extract powder per glass, the label serve for our 10:1 fruiting body extract. Weigh it on a digital scale with 0.1 g accuracy, because spoon measures vary between powders. At 1 g the earthy note is gentle and sits comfortably under the espresso and milk.

5. What milk works best for iced mushroom coffee?

Full cream milk gives the richest result, while oat milk is the most popular plant option because it stays creamy when cold. Almond milk makes a lighter drink and soy adds a little more body. Any milk works, since the extract has already been dissolved in the hot espresso before the milk goes in.
