200g of blue oyster mushrooms, wiped with a dump cloth and cut into slices
- 1 loaf of baguette, cut into thin angled slices
- 3 tablespoons of olive oil, separated
- 2 teaspoons of newly chopped thyme, with additional for decoration
- Season with salt and freshly crushed black pepper as desired
- 250g of creamy goat cheese, brought to room temperature
- Your preferred honey, such as wildflower, for a light drizzle.
Preparing the Crostini:
Preheat your oven to 350°F (175°C).
Arrange the baguette slices on a baking sheet.
Lightly brush each slice with about 1 tablespoon of olive oil.
Bake in the preheated oven for 15-20 minutes, or until they turn golden brown and crisp. Once done, remove and let them cool on a wire rack.
Roasting the Blue Oyster Mushrooms:
Increase the oven temperature to 375°F (190°C).
In a bowl, combine the sliced blue oyster mushrooms with 2 tablespoons of olive oil, chopped thyme, salt, and pepper. Mix until the mushrooms are well-coated.
Spread the mushrooms on the baking sheet in an even layer. If the pan has leftover breadcrumbs from the crostini, it will only add extra flavor!
Roast the mushrooms for 20-25 minutes or until they have a deep golden color and slightly crispy edges. Once done, remove from the oven and let them cool.
Spread a generous tablespoon of the softened goat cheese on each cooled crostini slice.
Layer the roasted blue oyster mushrooms on top of the goat cheese.
Drizzle a small amount of honey over each assembled crostini.
